Gabriela Chamorro is the Co-Founder and Executive Chef of Girl & the Goose-Restaurante Centroamericano, the UAE’s first dining destination dedicated to Mesoamerican cuisine. Opened in March 2025 at the Anantara Downtown Dubai Hotel by Rosy Hospitality, the restaurant builds on the five-year legacy of her underground supper club and has quickly become a home for modern Central American dining in the region.

Born in Nicaragua and raised in a family where food carried generational memory, Chamorro draws heavily from the flavors and stories of her grandmother’s kitchen. A self-taught cook before formally training at the Culinary Institute of Barcelona, she later continued her development at MAD Academy and completed stages at acclaimed restaurants including Geranium in Copenhagen and Kol in London.

At Girl & the Goose, Chamorro leads a young, passionate culinary team that reimagines dishes from Costa Rica, Panama, Guatemala, Honduras, Belize, El Salvador and Nicaragua through a contemporary lens. Her menus, rooted in heritage yet shaped by years spent travelling the world as Emirates cabin crew, are informed by a deep respect for street food culture and the regional diversity of Mesoamerica. Signatures such as Ceviche with Lychee Ice Cream, Lobster Bisque with Yuca Gnocchi, Sweet Plantain, Coffee & Orange Duck Confit, and the Chorizo Sweet Corn Pancake reflect her personal, exploratory style.

A UAE resident for 16 years, Chamorro’s journey began when she moved to Dubai with just USD 200 and an ambition to build a life of independence and culinary expression. The supper club she launched in 2019 quickly gained a loyal following, paving the way for the restaurant’s debut and positioning her as one of
the region’s most distinctive voices in F&B. Since its launch, Girl & the Goose has made a notable mark in Dubai’s ever-evolving dining scene by putting Central American cuisine on the map.

Beyond the plate, Chamorro’s work is defined by community, storytelling and cultural preservation. She is committed to championing Mesoamerican food traditions, nurturing local talent within her team and creating experiences that connect diners to the heart of her heritage.
