Nathalie Montoya Curabba, MS, CNS, LDN is a Board-Certified Nutrition Specialist®, Licensed Dietary Nutritionist, and health-supportive chef who brings food back to where it belongs: the center of health, culture, and everyday life. With advanced training in nutrition and culinary arts, Nathalie has worked clinically with individuals navigating cancer, metabolic, and mental health challenges, helping them use food and cooking as tools for resilience and healing. As Sustainability Manager at the American University of Sharjah, she founded the Green Teaching Kitchen @ AUS, the first program of its kind in the region, where students learn to cook with intention, building practical skills that support both personal wellbeing and planetary health. Nathalie believes the kitchen is a powerful classroom and that cooking is a critical life skill for shaping healthier futures.
